The Romanian Tămâioasă – Timmy, as oenologist Stephen Donnelly calls it – is said to have been brought to Romania by merchants from Ancient Greece. Since then, this Romanian grape variety has continued to produce aromatic and fruity wines every year. Tămâioasă wines are often made sweet or semi-sweet, but the variety naturally possesses aromas that do not necessarily require residual sugar to form the basis of a special wine.
For this classy wine, only grapes from 69-year-old vines were used, hand-harvested at dawn from a special section of our plantation, located at altitudes of about 170 meters. These old Tămâioasă vines have roots deeply infiltrated into the ground, allowing the plants to extract more mineral substances from the soil. Also to provide the best nutrition for our vines, the rows of vines were planted three meters apart, which ensures better growing and conditioning conditions.
The grapes were macerated using ultrasound technology, which allowed us to extract more aromas from the skins and obtain a must of exceptional quality. The must was macerated on the skins in the cold for approximately 48 hours, then the wine fermented for a period of 25 days together with special yeasts at low temperatures of 10°C, to maintain the freshness of the aromas. To protect the typicality and purity of the Tămâioasă Românească variety, the winery’s oenologist chose to vinify the wine in stainless steel tanks, without contact with oak wood.
Tasting Notes
This Tămăioasă delights us in the glass with a lively light straw yellow color, revealing pleasant aromas of elderflower and tropical fruits. The taste is fresh and fruity, based on notes of juicy summer fruits and green garden basil. It is a balanced and elegant wine, characterized by a long and fresh finish on the palate.
Food Pairing
Ideal to serve as is or with grilled fish, poultry, cheeses and Asian cuisine.
Serving Temperature
It is recommended to serve at a temperature of 10 – 12°C. Before consumption, store in a dark and cool place, away from sunlight.
