COLLECTION Dedicated especially to the HoReCa sector, the Budureasca Premium range contains gastronomic wines ideal for pairing with the finest culinary delights. Being a fusion between the old and new world of wine, that is, between traditionalism and modernity, we have included in this collection both pure Romanian and international varieties, as well as special blends. The red wines are partially aged in oak barrels for a minimum of six months.
VARIETY Cabernet Sauvignon is the most widely grown grape variety in the world, extremely popular for its full-bodied, intense tannins and blackcurrant and peppery aromas. Shiraz, on the other hand, brings a mix of black and red fruits to the fore, with blackberries and black cherries among the main aromas of the variety. The acidity is lower in Shiraz than in Cabernet, while the texture of the wine is silkier.
TERROIR 2021 was a favorable year for black grapes, with sufficient rain and over 2000 hours of sunshine in the sky. For the Premium Zenovius wine, our winemakers chose Cabernet Sauvignon and Shiraz grapes from the terraced region of our vineyards, where chernozem, clay and limestone soils predominate. Here the grapes ripen more slowly than those at the base of the plantation, acquiring a superior pulp-to-skin ratio full of aromas and pigments.
WINEMAKING DETAILS The must was cold macerated on the skins for five days, after which it fermented for up to three weeks with red wine yeasts. The vinification was done separately for each variety. After the fermentation was completed, in order to obtain additional structure and depth, half of the quantity of the two wines was matured for one year in American oak barrels. In the final stage, the wine was aged in the bottle for six months in the cellar, to polish the bouquet of aromas.
