COLLECTION The Noble story begins in 2011, with the launch of Noble Five, and continues in 2017 with Noble White. The collection is the brainchild of oenologist Stephen Donnelly, who dreamed of creating two high-class blends, using the noblest grape varieties from the most valuable plots of the Budureasca vineyards. From their first edition to today, Noble wines continue to impress juries at the most prestigious competitions in the world, including winning the gold medal at the Decanter Wine Awards in 2019.
VARIETY To create Noble White, Stephen Donnelly chose a trio of Chardonnay, Sauvignon Blanc and a touch of Muscat Ottonel, each with a distinct character and a well-defined role in the blend. The Chardonnay provides body and a smooth texture, while the Sauvignon Blanc brings fruity sensations, crisp acidity and a complex mix of mineral notes and herbaceous accents. Finally, the small amount of Muscat Ottonel added to the blend helps to balance the acidity and sweetness of the wine.
TERROIR The grapes were picked at full maturity in the second week of September, from vines located on sloping terraces, mostly positioned in the north of the plantation, where the soil is predominantly calcareous and sandy. The harvest was done exclusively by hand at dawn, when the temperature is lower, to prevent premature fermentation. In the vineyard, the 2023 harvest was excellent, without significant episodes of frost or drought, the grapes accumulating a lower level of sugars in the fruit compared to the average of previous years.
WINEMAKING DETAILS The three varieties were vinified separately, being fermented together with selected yeasts in stainless steel tanks without contact with oak wood, at controlled temperatures of 12 – 14°C. The Sauvignon Blanc and Chardonnay grapes were previously given a short cold maceration on the skins to extract more aromas. In addition, for the Chardonnay we periodically applied bâtonnage (mixing the yeast sediments deposited at the bottom of the tank back into the wine) during fermentation, to obtain a creamier texture in the final wine. Although it is a white wine, Noble White has good bottle aging potential.
