Cabernet Sauvignon is probably the most popular grape variety worldwide. The “king of grapes” or simply Cabernet, as it is fondled by enthusiasts and professionals in the wine industry, the variety is easily identified by its intense tannins, dark ruby color and characteristic aromas of black fruits and spices. When the wine is aged in oak barrels, we find, along with the notes of wood, vanilla, chocolate, cinnamon, tobacco, anise or marzipan.
Genetically, Cabernet Sauvignon was born from the natural mating of Cabernet Franc and Sauvignon Blanc varieties. Originally from Bordeaux, France, the variety prefers a temperate climate with maritime and oceanic influences and fertile soils with a clay profile. The day-night temperature cycle, with warm days and cool nights, is particularly important for the ripening of Cabernet grapes, which is why, in the Dealu Mare region, this variety benefits from an exceptional terroir.
In the case of the Premium Cabernet Sauvignon wine, grapes from the terraced plots of the Budureasca vineyards were selected. Here the bunches reach maturity later and the berries have a better skin-to-pulp ratio, the yield per hectare usually being a maximum of 8 tons. The conditions in 2018 were favorable for the Cabernet grapes, with over 2100 hours of strong sunshine and a sufficient amount of rain to accumulate a generous amount of natural aromas in the grapes.
After a delicate pressing, the grapes are macerated on the skins to extract flavors and color. Only the first-press must is collected, considered to be of higher quality, which is fermented for up to 25 days at low temperatures. 40% of the total amount of wine is then matured for 12 months in American oak barrels, so that the wine acquires more complex aromas and smoother tannins. Finally, after bottling, the wine rests in the winery’s cellar, where it rests at a constant temperature of 13°C for another six months of bouquet polishing.
Tasting Notes
The wine welcomes us with a dark ruby color, revealing pleasant aromas of blackberries and delicate notes of tobacco. This Cabernet is full-bodied, with excellent balance and a generous fruity taste of blackberries and black cherries, joined by typical woody accents and firm tannins.
Food Pairing
Excellent with beef and game, but also goes very well with hard and mature cheeses.
Serving Temperature
It is recommended to serve at a temperature of 16 – 18°C. Before consumption, store in a dark and cool place, away from sunlight.
