For this white sparkling wine, the wine base was blended with the sugars and the yeast in a pressurized stainless steel tank. We let the mixture to ferment inside the tank, accumulating high quantities of CO2. We then filtered, added the dosage and bottled the wine, with a pressure of around 3.5 bars inside the bottle. This method of production is very similar to that of a prosecco wine.
Tasting Notes
This wine has a very elegant and discreet pale green color and a pleasing taste of ripe pears. The Mediterranean aroma of juicy peaches and pears complements the harmony of the senses. It is a well-balanced wine, with a mineral aftertaste. The bubbles are fine and smooth throughout.
Food Pairing
Excellent when served as it is, but it can also be paired with Italian meat antipasti (prosciutto or bresaola), shrimp, scallops or cheeses like brie and camembert.
Serving Temperature
It is recommended to serve at a temperature of 5 – 7°C. Before consumption, store in a dark and cool place, away from sunlight.
