Vinification details:
For this Orange wine, the winemaker chose Sauvignon Blanc & Fetească Regală as the two grape varieties. The grapes were destemmed and lightly pressed. Then they were allowed to ferment on the skins at 18-20 degrees Celsius for 3 weeks, during which daily remontage was done, to extract aromas, tannins and color. Matured for 3 months in a 5000 liters oak vat, the wine was allowed to fully develop for an additional year before bottling.
Tasting notes:
The yellow-orange color was brought by keeping the must in contact with the skins of the grapes for a long time. This orange wine opens up with aromas that remind us of wildflowers, aromatic herbs, and beeswax. In the glass, we have a potpourri of spices with a sweet sensation of apricot jam. It has a full taste, with a fine and elegant structure of tannins, showing accents of vanilla and baked apples, around which the wine slowly reveals its alluring complexity.
Food pairing:
It can be paired with complex and aromatic food, such as aged cheeses from cows milk, garlicky marrow bruschetta, or even dark chocolate with sea salt.
Serving:
This wine is best served at a temperature of 14-16°C.
