Vinification details:Â
For this white sparkling wine, the wine base was blended with the sugars and the yeast in a pressurized stainless steel tank.
We let the mixture to ferment inside the tank, accumulating high quantities of CO2. We then filtered, added the dosage and bottled the wine, with a pressure of around 3.5 bars inside
the bottle. This method of production is very similar to that of a prosecco wine.
Tasting notes:
This wine has a very elegant and discreet pale green color and a pleasing taste of ripe pears. The Mediterranean aroma of juicy peaches and pears complements the harmony of the
senses. It is a well-balanced wine, with a mineral aftertaste. The bubbles are fine and smooth throughout.
Food pairing:
Excellent when served as it is, but it can also be paired with Italian meat antipasti (prosciutto or bresaola), shrimp, scallops or cheeses like brie and camembert.
Serving:
This wine is best served at a temperature of 7-9°C.
