Vinification details:

For this white sparkling wine, the wine base was blended with the sugars and the yeast in a pressurized stainless steel tank.
We let the mixture to ferment inside the tank, accumulating high quantities of CO2. We then filtered, added the dosage and bottled the wine, with a pressure of around 3.5 bars inside
the bottle. This method of production is very similar to that of a prosecco wine.

Tasting notes:

This wine has a very elegant and discreet pale green color and a pleasing taste of ripe pears. The Mediterranean aroma of juicy peaches and pears complements the harmony of the
senses. It is a well-balanced wine, with a mineral aftertaste. The bubbles are fine and smooth throughout.

Food pairing:

Excellent when served as it is, but it can also be paired with Italian meat antipasti (prosciutto or bresaola), shrimp, scallops or cheeses like brie and camembert.

This wine is best served at a temperature of 7-9°C.

Excellent read, I just passed this onto a colleague who was doing some research on that. And he actually bought me lunch because I found it for him smile So let me rephrase that: Thank you for lunch! “No one can wear a mask for very long.” by Seneca.
